Oysters Rockefeller
Named after John D. Rockefeller due to its rich sauce, Oysters Rockefeller is a classic American dish that's sure to impress your guests. These oysters are baked with a flavorful topping of butter, herbs, and breadcrumbs.
Ingredients:
12 fresh oysters
1/2 cup unsalted butter, softened
2 cloves garlic, minced
1 cup fresh spinach, finely chopped
1/4 cup Pernod (or other anise-flavored liqueur)
1/2 cup breadcrumbs
1/4 cup Parmesan cheese, grated
Salt and pepper to taste
Instructions:
Preheat your oven to 450Β°F (230Β°C). Shuck the oysters, keeping them on the half shell, and arrange them on a baking tray.
In a skillet over medium heat, melt the butter. Add the garlic and cook until fragrant.
Add the spinach to the skillet and cook until wilted. Stir in the Pernod, then remove from heat.
In a bowl, combine the spinach mixture, breadcrumbs, and Parmesan. Season with salt and pepper to taste.
Top each oyster with a spoonful of the spinach mixture.
Bake in the preheated oven for about 10-15 minutes, or until the topping is golden brown.
Serve hot with lemon wedges on the side.
