Our Story

The East Hampton Shucker Company was founded on the belief that if more people could open oysters easily and safely without the risk of injury to enjoy these delectable and healthy Bivalves, then more people would consume them.

Oysters filter 40-50 gallons of water per day and are an essential part of our aquaculture ecosystem and sustainability. Small oyster farms are cropping up in areas once filled with oysters and other species and cleaning waterways and estuaries around the world. It is a supportive community where oysters are harvested, enjoyed, and celebrated for their contribution to the sustainability of our environment.

Our Founder & CEO, John Nicholas worked tirelessly to put the right team together. Seasoned Executives and leaders in their field, passionate about the environment and sustainability, and as it turned out we all love oysters.

  • John Nicholas

    FOUNDER, CHIEF EXECUTIVE OFFICER

    Nicholas, who brings 30 years of financial and hospitality leadership experience to EHSC, intends to run the closely held Company with the capacity to scale in a professional manner. He has created an advisory board and management team of eight diversified professionals. EHSC's professional team includes two CPAs, several MBAs, and a range of professionals with an extensive track record in engineering, product design, retail, wholesale, logistics accounting, financial management, corporate advisory services, marketing and digital advertising, merchant banking/M&A, and technology. Designers, technicians & engineers with extensive experience, as well as factories familiar with all stages of production, will remain in place to bring the product(s) to market.

  • Bettina Klinger

    PRESIDENT & CHIEF STRATEGIC OFFICER

    Klinger brings leadership management experience and strong knowledge of brand, product development, marketing, and distribution. She operates as an Integral team leader, a critical catalyst in bringing a range of products to market with tactically curated stories empowering consumers/target market to emotionally connect with the brand. Brings effective insights into the tendencies and values of a diverse consumer base, and elevates the authenticity and approachability of brands and their message. Values leadership in developing a collaborative, passionate, progressively, creative, and strategic thinking team. Award-winning retail & marketing pioneer, product development, critical thinker, and branding expert, with over 25+ years in long-range image and brand planning through multiple distribution channels. Leads emerging brands, re-positioning heritage brands and introducing market disrupters and challengers to understand, define goals, and objectives and reach target markets. Guides businesses to develop, define, design, implement & measure ROI. Leader in company culture development to building multi-platform campaigns to garner market share from the competition, retain/acquire clients, increase average transactions & open new markets, and manage all aspects of budget, profit & loss, and company operations.

    James is responsible for the design of all creative assets across all channels. This includes the development of the creative strategy, tone, and voice for the company's products, as well as conceptualizing and executing creative for marketing initiatives.

    David Postolski, ESQ, a partner at Gearhart Law, is a registered patent attorney and Intellectual Property attorney. With over 17 yearsโ€™ experience, David specializes in assisting inventors, creators, artists, start-ups, entrepreneurs, early stage companies and emerging companies with their U.S and International intellectual property strategy, protection, enforcement and monetization. David is a frequent speaker and author on intellectual property issues surrounding emerging technologies (cannabis, crypto currency, 3d printing, gig economy), raising capital, business formation, licensing, and reward and equity based crowd funding. David is also a Professor at Temple University and Parsons School of Design where he teaches master level students about IP, ethics and other regulatory considerations in starting business ventures and products around design. David is the current Continuing Legal Education (CLE) Officer of the American Bar Association Section of Intellectual Property Law. He is the founder of their International Action Group and editor of their monthly newsletter. David remains very involved in the creation of New York Stateโ€™s first federally approved patent pro bono program in conjunction with Volunteer Lawyers for the Arts.
