Classic Mignonette Oysters
There's something magical about a freshly shucked oyster, briny and cool, straight from the sea. These Classic Mignonette Oysters are served with a traditional mignonette sauce that adds a bright, acidic note to perfectly complement the oysters' oceanic flavor. This recipe is a perfect appetizer to start a luxurious meal.
Ingredients:
12 fresh oysters
1/2 cup red wine vinegar
2 shallots, finely chopped
1 tablespoon freshly cracked black pepper
Lemon wedges, for garnish
Instructions:
Start by shucking the oysters. Keep them on the half shell and place them on a bed of crushed ice or rock salt to keep them upright.
Prepare the mignonette sauce. In a small bowl, combine the red wine vinegar, finely chopped shallots, and freshly cracked black pepper. Stir to combine, then cover and let it sit for at least an hour to allow the flavors to meld together.
Just before serving, spoon a small amount of the mignonette sauce over each oyster. Garnish with a lemon wedge on the side.
Serve immediately. As with all oysters, these are best enjoyed fresh!
